Grilled Yellow Squash

American<BR/>Vegetarian   Vegan   Low Carb   Summer   Spring   Grill   Side Dish   American   Squash  

2 small Yellow <a href="http://www.bigoven.com/whatis.aspx?id=Squash" class="deflink">Squash</a>
 pinch Course <a href="http://www.bigoven.com/whatis.aspx?id=Salt" class="deflink">Salt</a>
  Freshly <a href="http://www.bigoven.com/whatis.aspx?id=Ground%20Pepper" class="deflink">ground pepper</a>
1 tablespoon <a href="http://www.bigoven.com/whatis.aspx?id=Olive%20Oil" class="deflink">Olive oil</a>

Slice squash lengthwise.  Pat dry with paper towel.  Brush with olive oil, and sprinkle liberally with salt and pepper.  Bring a grill to medium-high heat; turn grill down to medium, and grill for just 2-4 minutes.  Move to upper rack to keep warm until ready to serve.  Do not start the squash until you're about 8 minutes away from sitting down, though, as overcooked squash can be mushy in texture.
